Pasta Shape and Sauce Cheat Sheet
One page: the major shapes by family, how to say them, and the sauce each one is built for. Keep it on your phone at the store.
★ = the everyday shapes worth knowing cold. The rest is range to grow into.
The one rule
Learn this and you can pair a shape you've never seen. It beats memorizing names.
- Heavier, chunkier sauce wants more structure to catch it
- Lighter, silkier sauce wants a longer, smoother shape
- Read any shape by length, surface, and hollow
- Bronze-cut pasta grips sauce; Teflon-cut sheds it
Long strands
Best with sauces that coat and cling rather than cluster.
- Spaghetti: tomato, oil and garlic, seafood
- Bucatini: amatriciana, rich tomato (it's hollow)
- Pici: cacio e pepe, garlicky tomato
Ribbons
Flat and eggy, with the surface to carry richer, meatier sauces.
- Tagliatelle: Bolognese ragù, butter
- Fettuccine: cream, butter, egg
- Pappardelle: boar, duck, short-rib braises
Tubes and twists
Hollows, ridges, and grooves that trap chunky sauce and morsels.
- Rigatoni / penne rigate: meaty, chunky sauces, baked dishes
- Paccheri: seafood, thick tomato, or stuffed
- Fusilli / casarecce / trofie: pesto, chunky vegetable
Shaped and filled
Cups that scoop, and filled shapes where the flavor is inside.
- Orecchiette: broccoli rabe and sausage
- Farfalle: light cream, tomato, cold salads
- Ravioli / tortellini: light dressing or broth (filling leads)

How to use this: Print it or save it as a PDF, or just keep it on your phone at the store. Match the weight of the sauce to the structure of the shape and you'll rarely go wrong.
Fresh vs dried: Not a quality ranking. Dried semolina shapes suit hearty and baked dishes; fresh egg ribbons suit silky, rich sauces. The shape and the dough are chosen together.
